Say hello to your new favorite appetizer! A delicious combination of savory and sweet with hints of cranberry and orange blended with tender New Zealand Spring Lamb ground lamb, these simple meatballs are bursting with flavor and exactly what you need to round out your holiday menu or any day of the week!

Ingredients

1 pkg New Zealand Spring Ground Lamb
2 tbsp grated onion
1 tbsp minced garlic
1 tsp Italian seasoning
2 tbsp grated parmesan cheese
Salt and pepper, to taste
String cheese or mozzarella, cut into 1/2” cubes
Cranberry BBQ sauce
3/4 cup jellied cranberry sauce
1/2 cup BBQ sauce
2 tbsp orange juice
1/4 sweet chili Thai sauce

Directions

  1. Prepare the cranberry BBQ sauce. Combine all ingredients in a saucepan. Simmer on medium for 10 minutes, stirring occasionally. Set aside.
  2. Preheat your grill to 400 F.
  3. Combine ground lamb, onion, garlic, Italian seasoning, parmesan, salt, and pepper.
  4. Using an ice cream scoop portion the ground lamb mixture. Place 1 cheese cube in the center of each portion. Using your hands, wrap the meat mixture around the cheese and shape into 1 1/2-inch balls. Place the meatballs into a muffin tin.
  5. Grill for 25 minutes and baste the meatballs with the cranberry BBQ sauce halfway through the cook time.
  6. Garnish with orange zest and serve with cranberry BBQ sauce for dipping.
