Ingredients

Lamb Chops

2 pkgs New Zealand Spring Lamb® Loin Chops (defrosted if frozen)
¼ cup olive oil
4 cloves garlic, minced
1 lemon, juiced and zest
¼ cup plain Greek yogurt
1 tbsp dried oregano
1 tsp freshly ground black pepper
1/2 tsp sea salt

Whipped Feta and White Beans

1 can (540 mL) white kidney beans
1 cup crumbled feta cheese
2 cloves garlic, minced
2 tbsp lemon juice
2 tbsp olive oil
1/2 tsp ground white pepper
½ tsp smoked paprika (optional)

Directions

Lamb Chops

  1. Combine all of the ingredients in a large re-sealable plastic bag; seal and refrigerate for up to 12 hours.
  2. Preheat grill to medium-high (350ºF).
  3. Remove chops from marinade and dry slightly with a paper towel.
  4. Place on a lightly oiled grill and cook for your preferred level of doneness.

Whipped Feta and White Beans

In the bowl of a food processor combine all ingredients and whirl until smooth; taste and season, cover and refrigerate until ready to serve.
