This grilled recipe is easy-peasy with a little lemon squeezy! One of the most economical cuts of lamb, shoulder is a great option if you’re feeding a crowd.
1 New Zealand Spring Lamb Boneless Shoulder, cut into 1” cubes
½ cup olive oil
6 cloves garlic, minced
2 tbsp dried oregano
½ tsp red pepper flakes (optional)
1 tsp sea salt
1 tsp freshly ground black pepper
8 wooden or metal skewers (if using wooden skewers, soak in water for
10 minutes prior to assembling the skewers)
Pairs well with a Greek Salad and garlic bread!
